Wine of the month: 2014 Chaff Mill Cabernet Sauvignon
When its starting to come in a little cold, we love nothing more than sitting down to a nice big glass of Cab Sauv and to be honest, the 2014 Chaff Mill is one of our favourites.
THE VINES:
The Cabernet fruit bunches are smaller than most of our vines and more spindly, which makes for a more concentrated wine.
The vines are some of our oldest at around 70 years old, giving the wine great complexity and depth of flavour.
THE WINE:
The varietal aromas shine through with blackberry, green capsicum and dusty notes adding complexity.
The palate is full but balanced; the chalky tannins give this wine a gnarly palate grip.
Excellent cellar life potential, can be put down for approximately 15 years.
AWARD:
Double Gold at the China Wine and Spirit Awards.
FUN FACT:
Our beautiful little, ironstone cellar door was once upon a time a Chaff Mill and that’s where the name for this stunning wine originates! Previous to that is was a quaint cottage that was built in the early 1800’s.

Pair with Smokey American Pork Ribs with Rustic Coleslaw.
